Blackstrap molasses is a robust, highly concentrated syrup used in brewing to impart deep, earthy, burnt caramel, and dark fruit flavors to heavier beer styles like stouts, porters, and old ales. Because it contains a high percentage of unfermentable sugars and intense minerals, it adds rich body to the finished beer but can easily overwhelm a recipe with astringency or a metallic bitterness if overused. Brewers typically incorporate it by stirring it directly into the hot wort during the last 10 to 15 minutes of the boil; this safely sterilizes the syrup while preventing it from sinking and scorching on the bottom of the kettle.
For a standard 5-gallon batch, the typical usage rate is between 4 to 8 oz (by weight), which provides a distinct character without dominating the base malts. For large scale commercial batches, the proportional equivalent is roughly 1.5 to 3 lbs per bbl.
